Ingredients:
- 1 lb ground chicken
- Romaine or butter lettuce leaves
- 3 garlic cloves (minced)
- 2 chopped carrots
- 2 chopped jalapenos
- 1/2 onion (diced)
- ginger root to taste
- 5 mushrooms (quartered)
- 1 tablespoon of olive oil
- 1/4 cup hoisin sauce
- 1 8 ounce can of water chestnuts, drained
- A healthy squirt of Sriracha
- 2 tablespoons of soy sauce
1. Wash lettuce leaves and pat dry. Set aside.
2. In a large skillet over high heat cook chicken until crumbly (5 minutes). Drain grease and transfer to a bowl.
3. Add olive oil to skillet, reduce to medium heat and sauté onions, carrots, peppers, garlic, mushrooms. Cook until vegetables are tender (7 minutes).
4. Add cooked chicken, water chestnuts, hoisin sauce, ginger, soy sauce and Sriracha. Stir well and continue to cook for another 2 minutes.
5. Fill lettuce leaves and serve. Yum!
